Problem Statement

St. Louis desires a food hall that brings guests together to socialize and eat and a place for chefs, new and seasoned, to test new recipes. A variety of local food and drink vendors will allow for new and expanding brands to gain new customers and “pop-up” spaces will provide chefs a cost-effective way to try out their latest invention.

local artisan restaurants, butcher shops, and other food-oriented boutiques under one roof

Concept: Living Room

The living room is the heart of every home, a multi-use space that families and friends use to gather, eat, play games, watch TV, and listen to music. A space where users can unwind and find refuge. The new ST. Louis food hall will be this space for its community. Guests will be able to eat, drink, and be social with friends, family, and co-workers. The food hall will also be a place for local chefs to start their restaurant journey, continue their legacy, or try out new recipes.

Overview of Tenants

 Louie on Demun

Louie on Demun is a contemporary Italian restaurant in the Clayton neighborhood of St. Louis. It has been a booming success since its open in 2017. the newest iteration at the new food hall calls back to its flagship restaurant with large floral motifs, a wood-burning pizza oven, and moments of luxury materials.

Brasserie by Niche

Brasserie by Niche new location in the food hall is a modern take on the French bistro restaurant, while calling back to the charm the first restaurant holds. Brasserie has been open for over 10 years and is still one of the most popular restaurants in the city thanks to its food, atmosphere, and outstanding customer service.

Balkan Treat Box

The Bosnian food scene in St. Louis is lead by the smash success of Balkan Treat Box, which started off as a food truck and in 2019 opened its first brick and mortar restaurant. Both the food truck and the restaurant are marked by the bold use of primary colors, natural wood, and a wood burning oven.

New American

A great addition to the new food hall would be a start-up restaurant for American food. The new food stall will have a retro diner look, with bright colored laminate patterns, checkerboard moments, and a vinyl tufted wainscot.

 Salt + Smoke

Barbecue in St. Louis is not a new idea, but Salt + Smoke brings traditional St. Louis BBQ with an at home and rustic feel. The brand runs multiple locations throughout the city, and would do well in the food hall. The design will feature the brand’s classic mustard yellow and natural wood, with chalkboard walls to display the menu and any specials.

Nixta

Mexican food is a staple in American cuisine, and Nixta’s contemporary take on it makes it a staple in the St. Louis food scene. The food hall location harkens back to its flagship in the Tower Grove South neighborhood. With bold Incan patterns, bright colored wood, terrazzo and tile, the food hall stall will have a Mexican folk flair.

BLK MKT Eats

BLK MKT Eats takes traditional sushi and makes it big. Sushi the size of a burrito has been a fun take on the Japanese cuisine that St. Louisians are eating up. The new food hall location for the brand features the bold black, white, and bright green color palette, along with a natural wood accent and bold graphics.

New Dessert

The new dessert cafe in the food hall will serve carnival style desserts with a 70s motif. The pastel color palette and simple repeating patterns give the stall a light and fun feel that will attract customers from their busy schedules with a sweet break.

 Sump Coffee

Sump Coffee is a coffee cafe that specializes in pour-over artisanal coffee. The brand’s location in the Marine Villa neighborhood inspires the new food hall cafe. A custom damask pattern with the brands beard wearing skull logo, gold leaf tile, and dark wood compliment the artisan coffee brand well.

New Açaí & Juice

The food hall will have a new açaí and juice cafe for those that want a sweet and healthy snack or drink. The design is influenced by tropical patterns with a black and white cel shaded style that attracts the eye to the bright and vibrant food and drinks that will be served.

Sasha’s Wine Bar

Sasha’s Wine Bar is a popular bar in the St. Louis scene, known for its relaxed atmosphere and robust wine menu.

New Cocktail Bar

The new cocktail bar in the food hall will bridge the drink gap for Rockwell and Sasha’s menus. The design of the combined bars takes a little from each brand and uses them in a contemporary iteration. Brightly colored tile, terrazzo, and dimensional tile with gold trimmings throughout.

Rockwell Beer Co.

Rockwell Beer Co. is a new brewery in St. Louis that impresses with its new beer brews and fun graphic design.

 Research & Development Spaces

The new food hall will feature two R&D spaces. The spaces will serve as a way for chefs, new and seasoned, to try out new dishes in a safe and easy way. The chefs would be able to sell tickets to their pop-up events and cook for their guests. This will provide a personal touch for the guests and trial-runs for the chefs and their cuisine.
